Black Teas

Pu’Er Big Leaf

An aged tea from China made with rugged leaves from mature tea trees, this may be steeped over and over again and won’t turn bitter! A very earthy flavor, produces a clear dark brown full bodied brew. Some current scientific studies underline their effectiveness in lowering cholesterol. Pu’er is also the name of a town in southwest China from whence the tea originates and is still grown.

Keemun

Perhaps the most important black tea from China with a slight smokiness and notes of sugar cane and red wine. Lower grades are often used in English Breakfast blends. Keemun is a black Chinese tea with a winey and fruity taste, with depth and complexity. The aroma of Keemun is fruity, with hints of pine (like in Lapsang souchong) and floweriness (but not at all as florid as Darjeeling tea). Keemun contains less caffeine than Assam tea.

Golden Buds

Elegant black tea from China’s Yunnan region. Golden Buds is one of the most remarkable black teas, made of 100% pure hand sorted golden-orange tea buds that are painstakingly picked out of the top grades of Golden Yunnan black tea. This tea is a specialty of Southwest Yunnan with a unique character unlike any other. Golden buds should be steeped for less time and with lower water temperature than most other black teas. This black tea has a golden-orange infusion with a creamy texture and notes of honey.

Darjeeling (Ambootia Estate)

India’s most renowned tea, has a unique flavor all its own and is grown on this organic estate in the foothills of the Himalayas. This estate has had a fine history of tea cultivation since 1861, a full-bodied, bright cup, with a delicate champagne after-taste.

Maghreb Mint Green Tea

Chinese green tea with peppermint, fennel, and black pepper. It is hand blended, deeply sweet and spicy notes of cardamom, ginger and clove.

Green Teas

Hojicha

Toasted tea and stems from Japan. Robust nuttiness. The leaves for hojicha tea are made by roasting regular sencha and bancha leaves until they turn brown. The roasting gives the tea a smoky fragrance and flavor.

Gyokuro

Intensely rich and spinachy Japanese green tea served on special occasions—a small cup savored alone is the perfect afternoon respite. Gyokuro is a delicate and refined green tea that has been shaded with mats made of reeds for the last ten to twenty days before harvesting so that it retains a brilliant green color. The shading process reduces the likeliness of photo-synthesis occurring.

Bi Luo Chun

Known as green snail spring because of the tightly curled dry leaves, this Chinese tea has hints of hay. Literally translated as “Green Snail Spring,” this is a famous rare tea grown in China. Bi Luo Chun is delicate and moss-like, curled into snail like shapes. Grown near Lake Taihu, at Suzhou, this tea is constantly shrouded in clouds and mist, giving it its unique and clean flavor. One pound of this hand picked tea usually contains 50&–60 thousand tea buds!

Oolong Teas

Anxi

This oolong is slightly oxidized, retaining some of the characteristics of green tea. This Chinese oolong is quite green, not more than 15 percent fermentation. The caffeine will be low and the characteristics of green tea and oolong are mitigated. An excellent accompaniment to food and a good tea for beginners.

White Teas

Silver Needle

A classic organic white tea from southeast China’s Zhenghe district, with only the tender leaf buds and very low caffeine. Organic Silver Needle consists of only the young, silvery down-covered buds that are harvested in the early spring. The white tea bushes of this district were domesticated from wild tea trees prized for their medicinal properties during the Song dynasty. The tea infusion is clear with a mysterious sweet fragrance.
